Nov 18, 2020 The cheese sauce freezes well, so feel free to make extra sauce and freeze some for a super quick meal or kid's lunch option. Leftovers will last 3-4 days in the refrigerator. The sauce does thicken when it cools or sits out for awhile, but there is an easy fix. This dairy free mac and cheese does have a lot of steps, but don’t be intimidated!! It’s only because it includes roasting the garlic and making the dairy free cashew parmesan. Not including these two steps, this recipe will only take about 15 minutes to make. Stir in the mustard and nutritional yeast flakes, grate and stir in the vegan cheese (if using), then season to taste with salt and pepper. Drain and add the macaroni to the sauce, then toss to coat. Transfer the mixture to an ovenproof baking dish (roughly 20cm x 30cm), then set aside.
